It’s an assembly line of comfort food at El Pollo Rico, the local charcoal broiled chicken place, where your ears ring as you watch them slice the chicken in half and the butcher’s knife slams on the counter. You get sides of rice, beans, coleslaw, or fries, and two sauces: a yellow sauce (which tastes like mayonnaise) and a green sauce (which tastes like hot chimichurri). I would go there more often, but when possible I want to buy meat that’s raised under more humane conditions (even allowing for the fact that it’s hard to verify or trust how meat is obtained at high-end grocery stores like Whole Foods). But sometimes time and practicality dictate that we’re just going to order takeout, which is why we need laws and not just individual lifestyle choices.
