Cake is better than pie, and I won’t be charitable to the opinion of anyone who thinks otherwise. For as much as I love pie, especially fruit pie, my life would go on just fine without it. There are other ways to eat blueberries if you don’t have a pie crust. There is no substitute for making a cake. I also have a complicated history when it comes to making pies, meaning that while the pie crusts I bake occasionally come out successfully, they usually don’t. There is something about the activity of rolling out dough that disturbs my sense of equilibrium. So when our friends gave us some chicken pot pie filling, I used a $2 two-for-one pie crust set from Safeway. The crust tasted like butter before I cooked it, and the top layer only collapsed a little when I placed it over the pie.
