I had a chocolate donut at the Seattle airport to get rid of jet lag before we dodged through the rain to find lunch. There is a Vietnamese restaurant near Pioneer Square where I tried an avocado smoothie; they made a mistake and included tapioca pearls, and their texture felt alien in the context of the blended avocado that tasted like ice cream. The restaurant was called “phở” something, but that’s probably because phở is the only Vietnamese word many white Americans know (albeit mispronounced), and their wider menu had a lot to recommend it. They had pot stickers so crisp they looked like they were coated with cinnamon, bún noodles that were like silk, and gỏi cuốn with fresh shrimp.
