I think I’ve figured out the secret to a McDonald’s hamburger. We weren’t there, we were at the neighborhood sports bar watching the Cubs win the World Series, but their burger reminded me of fast food. The secret is in the cheddar cheese: Use enough of it and you’re there for the dairy, and you almost forget about the bitter flavor of beef in favor of the comforting associations that only milk can provide. This is also the reason we go to Starbucks for the cream, not the coffee. I stayed up too late at home, watching the extra innings, and I found myself longing for fish.
