Gỏi cuốn with beef. To make the Vietnamese summer rolls, we folded the meat, bagged lettuce, and kimchi into rice paper and dipped them in nước chấm. Summer rolls are usually light and refreshing, but adding the beef made me greedy to finish them almost like I was eating a Vietnamese hamburger, and maybe I was.
